Recipe of the Day: Chicken Enchiladas

Ingredients

For Chicken Filling

  • Chicken Boneless ½ kg
  • Onion 2
  • Garlic chopped 1 tsp
  • Cumin 2 tsp
  • Salt to taste
  • Black pepper 1 tsp
  • Fresh coriander chopped 2 tbsp
  • Oil 2 tbsp

For Tomato Sauce

  • Onion 1
  • Crushed Red chili 1 tbsp
  • Tomato chopped 4 – 6
  • Tomato paste 1 cup
  • Lemon juice 2 tbsp
  • Brown sugar 2 tbsp
  • Salt ½ tsp
  • Black pepper 1 tsp
  • Garlic chopped 1 tsp

Other Ingredients

  • Mozzarella cheese 1 pack
  • Oil 2 tbsp
  • Tortillas 4

Cooking Directions

  1. In a pan heat of oil and sauté crushed garlic.
  2. Fry for a minutes then add boneless chicken, chopped onions, white cumin, salt, pepper, chopped coriander.
  3. Cook until the chicken is tender .
  4. For Tomato Sauce: In a separate pan heat oil add crushed garlic, finely chopped tomatoes, brown sugar, salt and crushed red chili.
  5. Cook until the tomatoes are tendered.
  6. Then add tomato paste, lemon juice and black pepper mix well and turn the flame off.
  7. Spread a layer of tortilla on a baking tray.
  8. Then spread a layer of chicken and then a layer of tomato sauce.
  9. Continue alternating the layers and lastly top with mozzarella cheese.
  10. Bake at 190C for 10 minutes.
