500g finely sliced onions
2 large eggs beaten
300ml double/heavy cream
250g grated cheddar
Place flour in a large bowl. add salt. stir.
add the fats and gently work with your finger tips or pulse in food processor till you get breadcrumb consistency.
add 4 tbsp of the water and bring pastry together. DON’T knead you don’t want to work the gluten.
Roll out to 4mm thick and line your pastry case. prick the bottom with a fork. and blind bake.
Melt butter in a frying pan.
Add the onions and fry on medium heat for 15-20 mins or till soft. Allow to cool for 5 mins.
Mix the eggs and cream in a jug and slowly add to onions. Gently stirring.
Add 200 g of the grated cheese and mix.
Pour filling into the pastry case. Top with remaining cheese and bake in 200 degree oven till filling is nice and golden on top. Serve with salad or green veg. can be eaten hot or cold
